This Creamy Garlic Mussel Pasta Recipe has quickly become a hit in our home. Pasta is a firm favourite in our house. Whether it comes in the form of a salad, a bake, or even on a toasted sandwich. Yes, there’s that too, and our kids go crazy for it. Our children enjoy most foods and we’re grateful for that. Probably because, from the time they were little, they have been fed interesting and unique flavours. I can’t take the credit for that… it was all my husband. He’s the one who spearheads most of the meals in our home.
When you are feeding a large family you try and find meals that are healthy, but also filling. I don’t want them coming back for snacks five minutes after dinner. Fingers crossed. Our meal prep trick, when making any pasta dish, we always prepare a double batch which then becomes lunch for the next day.
Pasta is the quickest and easiest meal to make, and you can create decadent and delicious flavours with items that you already have in your pantry, try cooking with you’re child, which I firmly believe encourages them to eat healthy foods.
We made a Paella a few weeks back and had some mussels in the freezer, we whipped them out and created this amazing quick and easy dish in twenty minutes.
Creamy Garlic Mussel Pasta Recipe
Serves: 8
Prep time: 10 min
Cooking time: 20 min
Ingredients
1 tbsp Olive Oil
2 tbsp Salted Butter
1 tbsp chopped garlic
1 large white onion (diced)
1 cup dry white wine
4 Lbs of whole-shell mussels
2 Jars RAGU Classic Alfredo Sauce
2 Boxes Barilla Whole Grain Pasta
Kraft Grated Parmesan Cheese
1 cup chopped chives
Salt & Pepper to taste
Directions for the Garlic Mussel Pasta Recipe
Fry the onions in the olive oil and butter over medium heat until soft.
Add the mussels and white wine, stir through, and allow the wine to cook down.
Add in the garlic and half a cup of chives (you’ll use the other half cup for garnish just before serving), and stir through for a minute or so, until the garlic is fragrant. Remember to discard any mussels that didn’t open during the cook.
Add both jars of RAGU Classic Alfredo Sauce and stir through, allowing it all to cook until the sauce is warmed through.
Add the pasta (cooked according to the instructions on the box), but remember, lots of salt in the water. And mix it all together.
Serve up with a sprinkle of Kraft Parmesan Cheese, and garnish with some more chopped chives.
It’s quick, it’s easy, and it is absolutely amazing!
