These Crunchies are not only a massive hit in my home but also have an amazing reputation in South Africa, and as a mother of five hungry children, who always seem to need a snack. I often find that I need to whip up a sweet treat ASAP! We call them Christmas crunchies due to the fact that we always have them on our Christmas table.
So, I thought I would share the recipe with you!
Ingredients
4 cups dry oats
3 cups Shredded Coconut – Unsweetened
1 cup Flour
1 1/2 Cups Sugar
1/2 tsp Salt
1 tsp Cinnamon
1 cup Salted Butter
3 Tsp Honey or Golden Syrup
1/4 Cup Milk (Full Fat)
2 tsp Baking Soda
200g Milk Chocolate
Non-Stick Baking Spray
Method
Preheat oven to 325’F / 160’C
Spray Baking Pan (9 inches by 14 inches)
Mix all the dry ingredients together except the Baking Soda
Combine the syrup/honey with the butter and melt. Allow cooling. (5 minutes)
Stir Baking Soda into the milk, and make sure it dissolves.
Add the cooled butter to the milk. Combine with the dry ingredients.
This is where it gets fun, get your hands dirty and mix all the ingredients together.
Spoon into the Baking Pan, flatten and cover with foil.
My suggestion is to bake for 15 minutes with the foil, uncover and bake for a further 15 minutes until golden brown. For a chewy Christmas Crunchie bake for 30 minutes. For a crunchier Crunchie bake for 35/40 min. Just keep an eye on it.
Remove from the oven and using a sharp-tipped knife cut your squares.
Melt the chocolate.
Drizzle over. Allow cooling.
These Christmas Crunchies are absolutely delicious! A huge hit in our house! In fact, I actually made some this week.
